Nella’s Chili

No idea who Nella is exactly, but this is one Ellen loves to make.

Simmer for pretty much as long as you want. The flavor improves with time. It’s also a wonderful chili to make a day ahead of time, refrigerate, and reheat when you’re ready to serve. Top with anything you want.

Ingredients

  • 6 slices bacon, chopped
  • 10 oz lean ground beef
  • 10 oz italian sausage
  • 1 large white onion
  • 1 bell peper
  • 1 cup red wine
  • 1/2 cup Worcestershire sauce
  • 1 tsp dry mustard
  • 1 tsp celery seed
  • 1 1/2 tsp chili powder
  • 1/2 tsp salt
  • 1 1/2 tsp black pepper
  • 6 cups italian tomatoes, crushed
  • 15 oz pinto beans (drained)
  • 15 oz kidney beans (drained)

Directions

  1. Brown bacon, ground beef and sausage in large pot; pour off excess fat.
  2. Add vegetables to the pot and cook for 2-3 minutes
  3. Add red wine, Worcestershire sauce and simmer, uncovered for 10 mins.
  4. Stir in spices and simmer another 10 mins.
  5. Add tomatoes and their liquid, along with the browned-meat. Beat to boiling, reduce to simmer and cook 25 mins, stirring occasionally.
  6. Stir in beans and heat to boiling again.
