Hot Smoked Turkey Sandwich
Mum’s great friend, Benalee, was staying the weekend when she made this for the first time. She like it so well she added it to her repertoire.
It helps if the bread is covered by the meat or cheese so it doesn’t burn under the broiler.
Ingredients
- 1/4 cup mayonnaise
- 2 tsps Dijon mustard
- 2 tsps chopped parsley
- 1/2 tsp oregano or basil
- 1/2 tsp tarragon
- 1/8 tsp pepper
- 2 medium tomatoes
- 2 slices dark wheat bread, or rye
- 1/2 pound smoked turkey, sliced
- 1/4 pound Swiss cheese, sliced
Method
- Preheat broiler. Line a broiler pan with foil.
- In a small bowl, combine the mayonnaise, mustard, parsley, oregano, terragon and pepper.
- Thinly slice tomatoes.
- Place the bread on the broiler pan. Spread each slice with the herbed mayonnaise.
- Dividing evenly, place the sliced turkey on the bread.
- Top with tomato slices and then with Swiss cheese.
- Broil the sandwiches 4 inches from the heat for 3 to 5 minutes, or until the cheese is melted and bubbly.
