Farmer’s Meat Sauce

There’s meat sauce the Italian way, then there’s meat sauce the Texas farmer’s way. This one is the latter. It’s also a handy way to sneak veggies into a sauce.

  1. Prepare all the veg, peal garlic, onion stuff, carrots, etc. It’ll take a minute.
  2. Heat large Dutch oven over MEDIUM heat until hot. Add Ground Beef and cook for 4-5 minutes. Add carrots and garlic. Cook for another 4-5 minutes, breaking beef into small crumbles and stirring occasionally.
  3. Add remaining ingredients.
  4. Turn heat to LOW, cover and cook at a slow simmer, stirring occasionally for 45 minutes. Uncover, adjust salt and pepper and simmer another 10-15 minutes or until sauce thickens.
  5. Turn heat OFF. Let sauce in the Dutch oven rest for at least another 15 minutes.
  6. Serve over your favorite pasta.
