Dad’s Hash
On the weekend, Dad loves to make hash for breakfast. He scours the refrigerator for any leftover roast meat, which he cuts into cubes, and then slices up potatoes and onions into cubes, and uses leftover gravy or water. He cooks it in a skillet until potatoes and onions are tender.
You can either cook it until all the liquid has been absorbed or evaporated and it cooks crisp, or you can serve it like a stew. Downeys like it served over toast or hot biscuits.
